SUGAR, WHEAT, AND DAIRY FREE BLUEBERRY MUFFINS!
As promised, here is the recipe. These ones turned out even better than my last batch that actually had sugar in them. Here is the recipe it’s super easy to make too!
1 1/2 cup of oats
1 1/4 oat flour (you can you any type of flour here if you are not on a food restriction like me ;) )
1/2 teaspoon of salt
1 teaspoon of baking powder
1/2 cup of honey
1 cup of soy milk (again, what every kind of milk product you use)
1/4 of applesauce
1 cup of blueberries (frozen or fresh, and really as many as you want)
Mix dry ingredients. Add wet. Mix well. Fold in Blueberries.Mine sometimes tend to look a little ‘wet’ some times. If this happens just add a bit more flour/oats until you are happy with the mix.
Divide into muffin tins, now keep in mind, these ones don’t rise that much. However full you fill the pan is about how tall they will be out of the oven.
Pre-heat the oven for 425 *F. Bake for 10 minutes, or until the toothpick test comes clean.
And then let cool and enjoy!
